White Chili
2 Tb. olive oil
1 1/2 cups onion, chopped
2 cloves of garlic, finely chopped
1 lb. ground turkey
1 – 4 oz. can of green chiles, fire roasted, mild
1 tsp. ground cumin
1/2 tsp. dried oregano
1/2 tsp. dried basil
1/2 tsp. cayenne pepper
1 tsp. salt
1/2 tsp. pepper
2 cups chicken stock
1 – 24 oz jar great northern beans (I like Randall brand beans), do not drain
1/4 cup fresh chives, chopped
16 oz. sour cream
1/2 cup finely shredded mozzerella
In a large stock pot, heat olive oil over medium high heat and add chopped onions and garlic. Saute for 5 minutes or until onions are transparent. Add ground turkey and continue cooking until brown. Add green chiles and all spices. Stir to combine. Add chicken stock and beans. Bring to a boil. Reduce heat and add chive and sour cream. Simmer over low heat for 1 1/2 to 2 hours. Add shredded cheese prior to serving.
