Ten cup cookies
Preheat oven to 350 degrees.
1 cup butter
1 cup creamy peanut butter
1 cup white sugar
1 cup brown sugar
2 eggs
1 cup flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 cup coconut flakes, sweetened
1 cup semi-sweet chocolate chips
1 cup raisins
1 cup toasted pecans, chopped
1 cups old fashioned oats
In a large bowl, cream together the butter, peanut butter, white sugar, brown sugar and eggs using a electric hand mixer. Add the flour, baking soda, baking powder and salt. Mix well. Stir in coconut, chocolate chips, raisins, pecans, and oats. Line a baking sheet with parchment paper and drop dough onto sheet. Bake at 350 degrees for 10-12 minutes or until lightly golden. Makes 3 dozen.
