Red Chile Beef Enchiladas
1 lb. ground beef
1 package of taco seasoning
1/2 cup onion, finely chopped
1/2 cup prepared salsa
1 can (or pouch) of red enchilada sauce (I prefer Frontera Red Chile Enchilada Sauce in the pouch)
2 1/2 cups of shredded colby jack cheese
Flour tortillas
Preheat oven to 350 degrees. In a large skillet, brown ground beef and drain excess grease, add chopped onions, salsa and taco seasoning and continue cooking according to package instructions. Spray the bottom of a baking dish with cooking spray. Add 2 Tb. of the enchilada sauce to the bottom of the pan and spread to cover the bottom of the dish. Warm the flour tortillas in the microwave to soften them. One at a time, place a approximately 1/3 cup of beef mixture evenly down the middle of each tortilla and sprinkle some of the shredded cheese on top of the meat mixture and roll tightly. Place them in prepared baking dish. Cover with the remaining enchilada sauce and top with the remaining cheese. Bake uncovered at 350 degrees for 15-20 minutes. Garnish with fresh cilantro, salsa and sour cream.
