Pico de Gallo
1 pint of cherry tomatoes, chopped and seeded
1/2 cup of finely diced onion
1 jalapeno, finely chopped
1 TB. fresh cilantro, chopped
squeeze of fresh lime juice
Mix all ingredients together and store in an air tight container in the refrigerator. Serve with chips or as a topping for tacos, eggs, casseroles, etc.
