Kale and Romaine Salad with Pomegranates, Feta and Almonds

2 cups chopped baby kale
2 cups chopped romaine lettuce
3/4 cup of pomegranate seeds
1/2 cup feta cheese, crumbled
1/2 cup sliced almonds, toasted
curly parsley, garnish
freshly cracked black pepper, garnish
Dressing:
1/4 cup dried minced onion
3 Tb. olive oil
3 Tb. water
3 Tb. honey
3 Tb. apple cider vinegar
1 tsp. salt
juice from 1 clementine
Blend all ingredients together (I use my Vitamix blender for this) until smooth. Toss with salad ingredients just prior to serving. Garnish with parsley and fresh cracked pepper.
