Grandma’s Goulash
2 lbs. ground beef
3 tsp. minced garlic
1 onion, diced
1/4 cup olive oil
2 cups water
1 cup beef stock
28 oz. can diced tomatoes
28 oz. can tomato sauce
1 Tb. Italian seasoning
1 Tb. Adobo seasoning
3 bay leaves
1 Tb. Lawry’s seasoning salt
2 tsp. ground back pepper
2 1/4 cups of elbow macaroni noodles
3/4 cup shredded cheddar cheese
1/2 cup grated parmesan cheese
In a large dutch oven/stock pot, add ground beef, garlic, onion and olive oil and cook over medium high heat unti fully cooked. Add water, beef stock, diced tomatoes, tomato sauce, italian seasoning, adobo seasoning, bay leaves, seasoning salt and pepper. Stir to mix thoroughly. Lower heat to medium low and cover. Cook for about 30 minutes. Stir occasionally. Lower heat to a simmer. Add macaroni noodles, cover and continue to simmer for 30-40 minutes. Stir in cheddar cheese. Simmer for an additional 5-10 minutes. Remove from heat and add 1/2 cup of parmesan cheese just prior to serving.
Note: This recipe freezes and reheats well.
