Crunchy Coleslaw
1 small package of shredded cole slaw mix (green cabbage, red cabbage, carrot)
1 small package of shredded red cabbage
1 bunch of green onions, rinsed and diced
1 package of ramen noodles (chicken flavored, reserve the flavor packet for the dressing), crush dry noodles into small pieces
Dressing:
4 Tb. white sugar
6 Tb. white vinegar
1 cup vegetable oil
2 tsp. asian sesame oil
1/2 tsp. salt
1/2 tsp. ground ginger
1 tsp. ground black pepper
packet of chicken ramen seasoning
In a small saucepan, mix the sugar and vinegar together and heat until sugar is dissolved. Mix the remaining dressing ingredients together and add the sugar and vinegar mixture to the other ingredients. Whisk to combine. Dressing can be stored in an air tight container in the refrigerator for a couple days.
Mix together the cole slaw ingredients, add the dressing and toss together 15 minutes before serving.
