Cranberry and Pistachio Goat Cheese Balls

1 –  8 oz. log of goat cheese, softened

1 –  8oz block of cream cheese, softened

2 Tb. honey, plus an additional Tb. for garnish

1/2 tsp ground ginger

1/4 tsp cinnamon

1/2 tsp dried thyme

1/4 tsp salt

1/4 tsp pepper

2 cups fresh cranberries

1 cup shelled pistachios

 

In a food processor, pulse the fresh cranberries and pistachios into small pieces. Add 3/4 cup of this mixture to the goat cheese, cream cheese, honey, ginger, cinnamon, thyme, salt and pepper. Mix well and refrigerate until firm. Next, roll into 1 inch balls and coat in the remaining cranberry pistachio. Refrigerate again to re-firm then drizzle with additional honey and serve with crackers.
