Copycat Mississippi Crock Pot Roast

2 Tb. olive oil

1 – 3 lb. chuck roast

1 package of Hidden Valley Ranch Mix

1 package of Lipton Onion Soup Mix

1 stick of butter

4-8 whole mild pepperoncini peppers (depending on how “spicy” you want the final product to be)

salt and pepper

 

In a large skillet, heat the olive oil over medium high heat. Season the chuck roast on both sides with salt and pepper. Sear the roast on each side for 2-3 minutes untila crust forms. Transfer the roast to a slow cooker, and add the ranch dressing mix, the onion soup mix, the stick of butter and the pepperoncini peppers. Cook on low for 8 hours. Shred the beef and serve.
