Buckeyes
1 – 16 oz package of chocolate flavored CandiQuik
1 1/2 sleeves of honey graham crackers, approximately 15 graham crackers
1 1/2 cups of peanut butter
2 sticks of butter, softened/partially melted
1 lb bag of powdered sugar
In a Cuisinart, break up graham crackers and set on high, pulsing in between, until graham has a fine sand texture. Add the butter and pulse to combine. Add the peanut butter and pulse to combine. Slowly start to add the powdered sugar, blending in between each addition. You may not use the whole pound, depending on the texture of your mixture. Once all ingredients are combined, form into small balls and place on a cookie sheet lined with parchment paper. Freeze for 15 minutes. Remove from freezer and prepare the chocolate for dipping. Remove the outer wrapping from the CandiQuik, leave the chocolate in the tray and microwave for 1 minute. Remove and stir, then continue to microwave in 30 second increments, stirring in between until completely melted. Using a spoon and a fork dip the peanut butter balls into the chocolate, coating on all sides and letting excess chocolate drip off before transferring back to the cookie sheet. You can reheat the chocolate in the microwave as needed to re-melt. Allow the buckeyes to firm up and harder before transferring to a storage container.
