Boneless Beef Short Ribs
4 lbs. of boneless beef short ribs (you can always find these at Costco)
2 tsp. kosher salt
2 tsp. coarse black pepper
1 cup ketchup
1/2 cup hoisin sauce
1/2 cup Kikkoman Toasted Sesame Marinade (this is my all time favorite marinade for chicken breasts too!)
1 cup BBQ sauce
1 cup brown sugar, packed
3 TB. minced onion
1 tsp. garlic powder
1 Tb. liquid smoke (optional)
Preheat oven to 300 degrees. In a sauce pan over medium heat, combine, ketchup, hoisin, toasted sesame marinade, brown sugar, minced onion, garlic powder, bbq sauce and liquid smoke. Mix together and cook until thick and bubbly, approximately 10 minutes. Season the short ribs on both sides with salt and pepper. Place the ribs in a 9 x 13 baking dish. Brush both sides of the short ribs with a thick layer of the sauce. Reserve the remaining sauce to baste the cooked ribs with.
Tightly cover the pan with heavy duty aluminum foil. Bake for 3 – 3 1/2 hours until tender. Transfer the short ribs to a serving platter and baste with some of the remaining sauce. You can also make a gravy by combining at least a 1/4 – 1/2 cup of left over sauce with a slurry of corn starch and water and heat in a small sauce pan until bubbly.
Serve with over mashed potatoes.
