White Bean and Kale Soup with Smoked Sausage

14 oz smoked sausage, cut into 1/2 inch pieces

1 medium onion, diced

2 lg carrots, peeled and diced

2 stalks of celery, diced

3 cloves of garlic, minced

3 – 14.5 oz cans of chicken stock

1 Tb dried parsley

1 tsp dried thyme

1 tsp dried oregano

1/2 tsp dried coriander

1/4 tsp smoked paprika

1/4 tsp cumin

salt and pepper

3 cups kale, rinsed and chopped into 1 inch pieces

2 – 14.5 oz cans of cannelloni beans

1 – 14.5 oz can petite diced tomatoes

In a large stock pot add smoked sausage and cook until golden brown. Remove from pot with slotted spoon and set aside, leave the grease in the pot. To the pot, add onion, carrots and celery and cook until onions are translucent, then add garlic and continue cooking for one more minute. Next add the chicken stock and all the spices. Stir to combine and bring to a boil. Continue cooking for 8-10 minutes. Reduce heat to a simmer and add kale, beans and tomatoes. Continue cooking at a simmer for 15-20 minutes. Add salt and pepper to taste.
