Sweet and Spicy Shrimp Tacos
24 medium sized frozen shrimp, thawed, peeled and deveined
3 TB olive oil
1 tsp minced garlic
1 tsp smoked paprika
1/2 tsp chili powder
1/2 tsp ground cumin
1/4 tsp cayenne pepper
1/4 tsp onion powder
1/4 tsp kosher salt
2 TB honey
1 TB lime juice
olive oil
soft taco shells
sour cream
fresh cilantro
diced jalapeƱos
Sriracha
limes
shredded cabbage
red onion
In a small bowl, mix together 3 TB olive oil, minced garlic, smoked paprika, chili powder, cumin, cayenne pepper, onion powder, kosher salt, honey and lime juice. Add thawed shrimp and marinate for at least 1 hour in the refrigerator. In a heavy skillet, heat an additional 2 TB. olive oil over medium high heat. Add shrimp and cook 1-2 minutes on each side, transferring cooked shrimp to a paper towel lined plate.
In another small bowl, combine sour cream, fresh chopped cilantro, diced jalapeƱos, lime juice and Sriracha to taste.
Fill taco shells with shrimp and garnish with sour cream mixture, shredded cabbage, red onion, and a squeeze of lime juice.
