Copycat Portillo’s Chopped Salad
2 small heads of romaine lettuce, approximately 4 cups of lettuce, washed and chopped
1 bunch of green onions, approximately 5-6 green onions, washed and chopped
1 cup of finely chopped tomatoes, seeded
8 slices of bacon, cooked and chopped
4 oz. of gorganzola cheese, crumbled
8 oz. ditali pasta, cooked according to package directions, drained and patted dry
Balsamic vinegar dressing
Combine all ingredients and dress with balsamic dressing, or dressing of your choice. (Optional: add chopped chicken for additional protein)
