Sweet Potato Casserole
4 large sweet potatoes
1 cup white sugar
2 eggs
1 tsp. vanilla
1/2 cup butter, softened
1/3 cup half and half
1 cup brown sugar
1/3 cup flour
1/3 cup butter
1 cup chopped pecans
1 cup shredded sweetened coconut
Preheat oven to 425 degrees. Pierce sweet potatoes with a fork and place on a foil lined baking sheet. Roast at 425 degrees for 1 hour. Remove from oven and allow to cool. Remove the skins and mash the sweet potatoes with a fork. In a large bowl, combine mashed sweet potatoes, white sugar, eggs, vanilla, butter and half and half. Mix well. Place the sweet potato mixture into a greased casserole dish. In a seperate bowl, combine brown sugar, flour, butter, pecans and coconut. Spreads evenly over the sweet potato mixture, pressing down to firmly coat the sweet potatoes.
Bake at 325 degrees for 35-45 minutes, or until golden brown.
