Smoked Sausage and Tater Tot Breakfast Casserole
1 – 30-32 oz bag of frozen tater tots
8 eggs
1 cup milk
1 package Hillshire Farms Smoked Sausage (13.9 oz)
1/2 cup diced onion
1 tsp. onion powder
1 tsp. garlic powder
3 cups colby jack shredded cheese, divided
salt and pepper
In a bowl, whisk together eggs and milk, season with salt and pepper, onion and garlic powder. Set aside. Dice up smoked sausage and add to a large skillet, cook over medium high heat for several minutes, add the diced onion and saute until onions are translucent and sausage is lightly browned. Grease a 9 x 13 pan and place a layer of tater tots along the bottom, season with salt and pepper. Sprinkle half the cheese over the tots. Layer with about half of the smoked sausage and onion mixture. Pour the egg mixture over the first layer. Top with remaining tots (seasoning again with salt and pepper), sausage and onion mixture and top with remaining cheese. Bake at 375 for 45-60 minutes or until tots are lightly browned and the eggs are cooked through.
Optional, serve with a dollop of sour cream and chive or hot sauce.
