Caramelized Vidalia Onion Dip
2 large vidalia onions, thinly sliced
3 Tb. butter
2 tsp. salt
2 tsp. sugar
1/2 cup white wine
10 oz. sour cream
6 oz. cream cheese, softened
2 Tb. mayonnaise
2 tsp. soy sauce
In a large saute pan, melt butter over medium heat. Add sliced onions, sprinkle with salt and sugar and stir to combine. Continue to stir occasionally for 10 minutes. For the next 20 minutes, add splashes of white wine to keep the onions moist and prevent browning, while continuing to stir. Be patient, and wait for the onions to get a nice carmelization on them. Once carmelized, remove from heat and chop into small pieces. Add the sour cream, cream cheese, mayo and soy sauce. Stir well to combine. Serve at room temperature. This will keep in the refrigerator for several days. Serve with potato chips.
