Pizza Pinwheels

1 package refrigerated pizza dough, (I like Wewalka Classic Family Style Crust)

1 Tb. olive oil

1/4 cup pizza sauce

1/2 cup parmesan cheese, divided

1 1/2 cups shredded mozzarella cheese, divided

1 cup of pepperoni, chopped and partially cooked

(Add other toppings as desired)

1 Tb. italian seasoning

Preheat oven to 450 degrees. Chop pepperoni and cook in the microwave for 30 seconds or place in toaster oven for several minutes. Remove and drain grease on paper towel. Roll out pizza dough on floured surface to the approximate size of a jelly roll pan (11×15). Brush dough with olive oil. Spread the pizza sauce evenly over the dough. Sprinkle half of the parmesan and half of the mozzarella onto the dough. Sprinkle crumbled pepperoni and any other toppings you would like and then top with remaining mozzarella cheese and italian seasoning. Roll the dough into a log and pinch the ends to close. Slice into 12 pieces and onto parchment lined baking sheet/jelly roll pan. Bake for 12-15 minutes or until browned on top. Top with remaining parmesan cheese.
